This recipe is a lighter take on a classic year-round dish.
We've updated classic bacon wrapped asparagus to be a more fresh and bright dish. In place of standard belly bacon, we've opted to use our more lean Ham Bacon or Back Bacon, as well as finishing with fresh lemon zest, pecorino, and lots of black pepper.
Bacon Wrapped Asparagus
2 lbs Asparagus, Ends Trimmed
1/2 lb Pecorino, Finely Grated
1 Lemon, Juice and Zest
Toss asparagus in olive oil and season with salt.
Bundle three stalks of asparagus and wrap a slice of bacon around the center. Secure with toothpick. Repeat with all asparagus.
Bake at 400° for 10-12 minutes, or until tender.
Remove from oven and drizzle with olive oil. Sprinkle with cheese, lemon zest and freshly ground black pepper. Finish with a squeeze of fresh lemon juice.
