Whether we're serving up a holiday ham, or want a simple side for weeknight dinner, this is one of our favorites. Our chorizo lends a mildly spicy warmth, which is beautifully balanced by the creaminess of rich crème fraiche.
Fingerling Potatoes with Chorizo and Crème Fraiche
2 lbs Fingerling Potatoes, Cut Lengthwise
1 White Onion, Diced
Place potatoes cut-side down on tray and place in 450°F oven for 10-15 minutes, or until tender.
Brown Chorizo in pan over medium/high heat.
Remove the chorizo from your pan and sauté onions until fully cooked and lightly browned (5-7 minutes).
Combine roasted potatoes, onions, and browned chorizo.
Top with chopped cilantro and a big dollop of crème fraiche.
