This isn't your typical sandwich.
Crispy toasted bread, spicy Chorizo, and cool vegetables come together in this recipe to create an unbelievably easy and delicious Torta. While we opted to top ours with the most commonly available vegetables, you can use whatever is on hand from jicama to carrots. If you're feeling extra fancy, or hungry, top it with an over-easy egg. Just make sure you have a fat stack of napkins at the ready.
Easy Chorizo Torta
4 Large Hot Dog or Hoagie Rolls
1 Head Iceberg Lettuce, Shredded
1 Tomato, Sliced
1 Avocado, Peeled, Pitted, and Sliced
1 Cup Sour Cream
Butter, at Room Temperature
Preheat oven to 375ºF.
Heat a large sauté pan over medium-high heat. Add the Chorizo and brown, stirring occasionally.
Slice the buns in half, butter, and toast in the oven for 5 minutes.
Remove the buns from the oven and top with Chorizo, lettuce, tomato, avocado, and sour cream.
Pat yourself on the back, get out the napkins, and eat!
