Chicken liver is extremely nutritious, with high levels of iron, copper, zinc, and vitamin A. It is very flavorful with strong mineral notes. Cooked correctly, it can become creamy and velvety. When we opened the butcher shop, we used our chicken livers to make delicious chicken liver mousse. We’re excited to offer the opportunity for you to create the dish yourself!

What's
In It?
This is exactly what it sounds like - the liver of a chicken. Our chicken are never fed any antibiotics, hormones, or animal byproducts which makes for healthy animals and delicious offal.
Cooking Notes
We like to make Chicken Liver Mousse with this cut. Dry the livers and sear until they are brown, but not over cooked. Remove from the pan and add some garlic and thyme. Cook and deglaze with sherry and whiskey, then add salt. Blend all ingredients in a blender until smooth. Serve on crusty bread with pickled onion or a vinaigrette salad for acid.
