Rendered Pork Fat, also known as lard, is made by cooking all the moisture out of pork fat. It has been used in cooking for as long as we have been eating pigs. Rendered Pork Fat is a great natural fat that can be used in cooking or baking. It was used in baked goods for years before the introduction of vegetable oils and hydrogenated oils - think of it as a natural crisco. At Porter Road, we have been rendering pork fat since we opened our Butcher Shop doors, because whole animal means whole animal.

In It?
Rendered Pork Fat comes from all over the pig but mostly from the kidney fat. Once cooked, the fat is mild in flavor, with a slight meatiness to it.
Cooking Notes
Rendered Pork Fat is best used in baked goods to replace crisco or butter. It makes an amazing biscuit and pie dough. It can also be used as an oil for searing.
