In It?
St. Louis Pork Steaks are a lesser known cut that packs a ton of great flavor. We cut our St. Louis pork steaks from the butt aka the top half of the shoulder of a hog. We take our pork butts and slice them on the saw to be 1" thick. We then cut them down to a perfect serving size of 8 ounces. We leave the shoulder blade bone in to maximize the flavor.

Cooking Notes
Generously season this steaks with salt and pepper then grill for about 10 minutes, flipping halfway through. Put them in a pan over medium heat and add a mixture of equal parts beer and barbecue sauce until submerged. Cook for at least two hours. These pork steaks can’t be overcooked, so make a big batch and keep it warm to snack on all day.
