Sliced Beef Liver
We think that pasture-raised is always the way to go, but that it’s especially important when enjoying offal. Our skilled butcher take the time and care to create perfectly sliced pieces of liver that have been cleaned and membrane removed, so they're ready for classic liver and onions.
Note that this is one of the few beef cuts that is removed by our butcher before the dry aging process begins. Don't worry though — it still has a TON of flavor.
These slices of beef liver are expertly trimmed, and packed with nutrients. Our beef are never fed any antibiotics, hormones, or animal byproducts which makes for healthy animals and delicious offal.
Dredge these slices in flour and fry in a hefty dose of butter over medium high heat. Remove the liver, then cook the onions in the same pan over medium-high heat, with thyme, salt and pepper. Deglaze with sherry.
