Lamb Shoulder

Lamb Shoulder is one of our favorite cuts to braise, and if you haven’t had it before—we suggest you change that immediately. Our lamb stands out because we feed them a mixture of non-GMO grain and a diet of unlimited grass. This lifestyle creates a tender piece of meat resulting in a delicious, much milder (and less gamy) flavor. Note, our Lamb Shoulder is Bone-In.

The Lamb Shoulder is a great cut of meat, located at the top of the back, near the head. Our lambs get a workout on the pasture and because of this the shoulder develops an awesome flavor. It’s naturally a very tough piece of meat, but when slow cooked properly becomes tender and delicious.

Slow and steady is the name of the game here. Cook on low heat over a long period of time until the meat becomes nice and tender.
