The Lamb Shoulder is a great cut of meat, located at the top of the back, near the head. Our lambs get a workout on the pasture and because of this the shoulder develops an awesome flavor. It’s naturally a very tough piece of meat, but when slow cooked properly becomes tender and delicious.
Slow and steady is the name of the game here. Cook on low heat over a long period of time until the meat becomes nice and tender.
