Lamb Merguez is a traditional North African sausage, made with lamb and heavily seasoned with spices and fresh herbs. To keep things mild, we omitted the traditional harissa in favor of extra herbs. Additionally, the use of our grain-fed lamb makes these links less gamy than you might expect from a lamb sausage. Serve on their own, or with couscous and grilled vegetables.These links have a natural casing so we advise starting them over low heat before searing, to reduce the risk of bursting.

Our sausages are made with carefully selected trim from the entire lamb. We season them with our own custom blend of herbs, spices, and fresh ingredients to give it great texture and flavor. Ingredients: Lamb, salt, pepper, red pepper flakes, sweet paprika, cumin, garlic, oregano, thyme, scallions, lamb casings.
Popular in Morocco, these links are traditionally served with couscous, white beans, or vegetables. We always suggest starting our sausages on low heat, then crisping them up at the end. The indirect cooking method will prevent the natural casing from exploding and drying out your sausage.
